Soy protein: usually refers to the protein extracted from soybeans, after preliminary processing and treatment. Soy protein can be in a concentrated form, containing a high level of protein (about 40-70%), but still retaining some of the fat and carbohydrates.
Soy isolate protein is further purified from soy protein through a more refined process that removes most of the fat and carbohydrates to give a higher purity of protein, usually 90% or more.
