Introduction
Neutral protease is a concentrated product produced by submerged fermentation of Bacillus subtilis followed by purification and formulation. Due to its high concentration, mild reaction condition requirement and easy control of degree of hydrolysis, the neutral protease has been widely used in alcohol fermentation, leather softening and depilation, silk degumming, vegetable and animal proteolysis, brewing, juice clarification, baking and feed, etc.
Mechanism
The Neutral Protease catalyzes the hydrolysis of protein to produce free amino acids and short peptides within a pH range from weak acid to weak alkaline environment. Besides the main activity of endo-peptidase, the product also contains exo-peptidase, whose joint actions leads to liberation of short peptides and free amino acids.
Applications
  • Food industry: The product can be used for vegetable and animal protein hydrolysis, meat tenderization, wine stabilization, functional peptide products or health foods production, soy sauce and vinegar brewing, etc.
  • Baking industry: In bakery industry, Neutral Protease is able to hydrolyze protein to weaken gluten network, improve dough handling properties, render biscuit attractive golden color and more crispiness, reduce the use of sodium pyrosulfite and residual SO2.
  • Brewing industry: Added mashing, Neutral Protease will boost FAN level, especially when high percentage of adjunct (barley, for example) is used. The product can also prevent the formation of cold haze.
  • Textile industry: Compared with traditional way, treatment with the product will make wool have more tensile strength, more softness, and shrinkage resistant. It can also be used for the silkworm silk degumming and refining.
  • Tanning industry: In tanning industry, the protease has been used for depilation of hide with efficient hair removal, nice grain, less pore shrinking and no other harms.
  • Feed industry: Either added during processing into feed or mixed with feed before feeding, Neutral Protease improves biological value of protein from different sources, and therefore, helps to make best use of feed and reduce processing cost.
  • Soybean protein modification: By careful control of degree of hydrolysis Neutral Protease is able to improve the functionality of soy protein isolate or soy protein concentrate, for example, dispersibility, foaming properties, and render health functions by producing functional peptides.
